We harvested all our olives in a fully mechanized way, to prevent any touching the soil and minimize the collection time. The precise moment is when the olive has reached its optimum point of maturation. This is when, having lost its vegetal character, it contains in its interior all its organoleptic qualities.
Our modest production allows us to collect all the olives at the right time and in a very short time, ensuring that all of them reach the oil mill without suffering any deterioration. As soon as the olive is collected, it is loaded into containers and the oil mill, which is only 20 minutes from the plantation, leaves. The time that elapses from the time it is collected, until its grinding begins, is key to producing an extra virgin at the highest level.
